Black & Orange

Orange vegetable soup with black quinoa.

Soup:
Half a butternut squash
4 small yams
6 carrots
a small piece of pumpkin
4 garlic cloves
1-2 tsp salt
1 tsp white pepper
1\2 tsp ground nutmeg

Wash and peel all the vegetables and cut them into small pieces.
Put the vegetables and the garlic cloves in a pot, cover with water and cook till the vegetables are soft.
Use a stick blender to mash all the vegetables to a creamy soup.
Add the spices and cook for a few more minutes.

Quinoa:
Simply cook a cup of black quinoa in 2 cups of water and 1 tsp salt, for about 20 minutes.




Form a nice circle of quinoa in the middle of your soup bowl.

I didn't have a ring so I just used a measurement cup. Actually, I used the half cup. Squeeze the quinoa into the cup and gently turn it over onto the bowl, it should to the trick.

Pour the soup around your quinoa circle.





This recipe is my entry for "Vegetable Love" 2008.
I'd make this recipe myself on valentine if a certain someone wasn't reading this blog, now I'll have to think of something else.
If you make this as a romantic dinner of two, be ready for a lot of leftovers, this makes a lot more than two dishes.
